Brisket question

I am cooking a 10lb. packer tomorrow for Mothers day.  Was going to cook it at 250 degrees.  About how long do you think I should cook and put it on?  Thank you again.

    1-1.25 hours per lb at 250. Usually 1 per lb for me but give yourself some wiggle room

    Put it on a little early.  You can FTC for hours and be relaxed.

    Don't know when your slice and eat time is but back up a couple of hours from there and aim for that time.  The key for me is to get to the finish-line inside the FTC window (which can easily run 4-6 hours) as the brisket enjoys at least a couple hour FTC.  Be sure to give it around a 20 minute cooling rack rest (stop the carry-over cooking) before FTC.
    Since you can easily trim one-three lbs off the packer before starting the cook just know the approximate post-trim weight.  Remember:  the cow drives the cook.  Enjoy the cook and follow-on eats.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

  • Agree with all the others. I like a long cooler rest or at least an hour on the counter before slicing. Should be easy to handle with bare hands when you slice.

    Flying in to rome, then we are spending 3 days on Ischia (island right by Capri). Spending a week in a villa in Tuscany and flying out of venice.

  • Loved Capri.  We did the whole bus tour.  Was actually better than I thought it would be.  Started in Rome and went north to Tuscany, Milan, Alps/Lake District, Venice, Sorrento then Capri.  Finishing off in Rome.

    @The Cen-Tex Smoker: I spent a few weeks in Tuscany a few years ago. While in Rome, I strongly recommend that you visit St. Peter's if you haven't already. I have never seen anything as impressive. The lines to get in are ridiculous, but if you purchase a tour in the catacombs below the basilica, you then bypass the line to get into St. Peter's. WELL worth it. Enjoy your trip.
