I just did a spiral sliced for Easter. We threw the glaze away. Pecan wood added enough flavor.Michiana, South of the border.

Although not spiral, the pecan nuggets would nestle nicely in the crevices. I used Malcolm's Bourbon Praline ham as a starting point yesterday, and in typical fashion, veered off a bit.

EW is bourbon, could be any flavor of choice. Some may go high end, but I prefer cooking with mid range booze, drinking the other. Boetje's is a local favorite coarse ground mustard, Dijon, even yellow, would be fine. Pinapple and ham is PB and J, but orange, apple, peach, all good. I love Brer Rabbit blackstrap molasses in just about everything bbq, smoke, and cure related..wanted to darken it a bit, you could easily leave it out. The pecans are a brilliant, crunchy, addition.
Smoked with Comp K briqs and pecan, started at 250, crept up to 300s while setting the glaze.
Pulled mid 130s. Perfect, "fire ham".

That is just gorgeous!Wisconsin, lbge, MM, kab, pig tail flippers, bear claws, and more rubs than I will admit to.

It was the best ham I have done to date. Even my brother couldn't hate on it, and asked for more to take with him to eat at work last night.
