First smoked cheese attempt

First run with my amazen smoker. Ended up playing around with a 4 year old sharp cheddar, a black truffle Gouda, 5 year old cave aged asiago, and some left over garlic white cheddar. All smoked with some apple pellets with the amazen smoker for about 2 1/2 hours.  Vac sealed and will let them sit for a week or two and then we will see what kind of results I end up with.
