    @Big_Green_Craig or Camp Chef, Finex, Wagner, Griswold or ....
    Lots of other CI options out there.

    I don't have a CI griddle so this could be an option. Amazingly they will be available in the UK, priced at£45. It is 16 inches in diameter.

    Yes. The 54 is basically for the XL and the 48 is for the L. We have several of each including SS tops if desired.

    Meh. I designed and custom ordered a 3/8" thick 18" stainless griddle for my BGEL, seems like it will be much easier to clean and maintain than CI not to mention I don't have to worry  about excessive temps.

    Stainless has it's place but it will never "season" to be a near non stick cooking surface. Not to mention the big difference in price. $45 is not bad.
    With no connections, the 18" SS would set us back around $200+.

    You don't think stainless plate won't season up like the blackstone top?  I've never tried.

    I have never seen anyone season stainless like they do CI.
    I have a small round stainless plate I use on my Mini. It's far from non stick but small enough I can soak it in a bowl over night and toss in the dishwasher.
    I could be completely wrong again. I don't know for sure.

    Anything is possible.

     The carts are assembled when we get them. They don't have feet available any longer, they use a table nest which is a bit taller than the old school feet and allows a bit more air gap. The manufacture says you don't need one , but I would throw it in as insurance if you want it. I like to put them under every egg. Just eliminates discoloring potential etc.... I take the lid off and remove the guts of the XL when transferring them in the store. Too darn heavy and awkward even for two guys imo.

    @Photo Egg  actually SS flattops will and do season up but, not like Grandma's CI.  If that's what you mean? Heat retention is a bit different also and removing scuffs from older one's etc takes patience but, they perform nicely. I've worked on several comm SS units Toastmaster, APW, Globe, Star, Vulcan and others. It comes down to preference really.
