First cold smoke

I have always cooked bacon to 160 then pull it however I am trying a cold smoke how cold can I leave it though?

cold as you want, assuming it isn't going to freeze

trial and error.
hams i go as long as possible. 12-16 hours. bacon i have done 6-8 but i usually hot smoke that now

Any reason you hot smoke it now?

Thus, as long as you started with meat that was fully thawed, you can cold smoke as low as 28 degrees for days. Above 28 degrees and below 40 degrees you can cold smoke for weeks if the need arises.
