Morning Gang,
I have several hams. They are not whole, but fist sized. Going to season, wrap in bacon and slow cook to 140*. Any other suggestions or advice?

Try to look at the grain on each piece and wrap the bacon perpendicular to it so when you slice it you are cutting against the grain.
