    Don't measure the point at all. It's ready when the flat is tender. This usually happens between 195-205 on choice briskets. Ignore any temp readings over 195 anywhere and check for tenderness in the thickest part of the flat.

    :o so..if I got it right..cen-tex says you are supposed to have limp meat
