Stuffed Pork Chops

thick chops from Sam's Club. Stuffed with Lomo, Scallots, Spinach, and Smoked Gouda. Raised direct at 400*. Pulled at 148* IT. Lost a lot of the cheese through ooze-out but still decent. 
I like my butt rubbed and my pork pulled.
