We have a contest at work on Wednesday. I need to cook it Tuesday and it will not be served until Wednesday at noon.

Can't go wrong with chili, this time of year. Often times, it's better on reheat.Dial the heat down, and go with beef for a crowd pleaser. Along with ground beef, smoked, small diced brisket takes it over the top. Beans would spread it out(quantity) and help with cost.You can get more chile flavor without the heat when toasting and grinding your own. Ancho, Pasilla, Guajillo for examples.BrandonQuad Cities

I cook butts all the time for work.let them cook all night wrap in foil and put in cooler in the am,at lunch still good and warm.Works great for pull pork sandwiches.
