Had to eat grocery store bacon!

Wasn't paying close enough attention to my bacon supply, and ended up having to buy some store bought. It's been so long since I've had it, I forgot just how much I disliked it since making my own the last couple years. So thankfully I'm back on track to fill my freezer with delicious delicious home smoked BACON! Started with an approximately 17 pound belly, trimmed up and portioned. Both are based off Ruhlman's recipe, but using a great online curing calculator. 2 basic cure, and 2 savoury. Can't wait.

I agree once you make your own bacon it is hard to find better anywhere else. My Ace dealer just gave me two packages he just made.XL & waiting for my Mini Max Bloomington MN.

I have my first shot at bacon curing now. Not getting any juice, hope I didn't screw this up.

I've never found mine get too wet at all and I've never had a problem. It's pretty foolproof. Add salts, etc, seal, flip occasionally, rinse, dry, smoke (hot or cold). Good luckLBGE (2012), MiniMax (2014), and too many Eggcessories to list. - Sudbury, Ontario -
