Pork Picnic Skin???

Going to low and slow my first pork picnic tonight. Leave the skin on? Score the skin? Or trim it off?

I take it off and make crackling. Got a bunch of belly skin going in the sous vide tonight

Forgot to say you don't get bark where there is skin.

I score it in about 1 inch sections. When it comes out right you can pull the sections off and each them and they taste like bacon. Not very healthy but really good. When they come out good I have eaten almost the whole skin off after a couple drinks.
