Spatchcock in the cold

About 9 degrees here, but had a chicken that needed to to be egged. Lit the egg, brought it to 400 degrees raised direct. Put a foil pan of potatoes under the chicken, and let it go. I was going to hook up the Maverick, but decided not to. Mistake, the temp fell to 300, I removed the spuds, opened the vents a bit, and put the bird back. Temperature shot up to 470, the chicken was a bit charred, but temp was 190. All in all it wasn't bad. I was using a bag of Frontier lump-- very small pieces, not my favorite lump, but it needs to be used up.

    It's around 32 here, I'm grilling NY strips and some twice baked spuds on the LBGE.

    How do the potatoes come out under the chicken, do you do anything extra to them?

    I tossed some red skins with some olive oil. They turned out okay. Crispy on the bottom, but I pulled them early after the temperature went low. Finished them in the oven.The last time I used Yukon golds, they were better.
