need recipe for bacon

Hi, Just bought 1.75# of pork belly from a local farmer. Would love to make some bacon. Anyone have a good recipe or technique?

Also the one from Ruhlman's Charcuterie is maybe a little better IMHO.
At 1.75lb I would suggest not going the full 7 days. I do 5-7lb slabs that long but I think yours would be too salty after that.Madison, CTLBGE June 2013. -
I use the "just enough" cure for the weight of belly technique. Sprinkle evenly then vac-u-suck it in a foodsaver bag. You can't over-salt using this method (unless you just add too much salt). Flip it over once a day during the cure.
