Adjustable Rig with Spider Question

I have seen the adjustable rig for large BGE on the CGS website and read all the rave reviews everyone has posted here. One question I can't seem to find the answer to is when you use the spider and 13" stone instead of the platesetter can you get enough lump in the egg to still do long cooks? Also, which is a better setup...the spider and 13" stone or the oval stone in the bottom of the adjustable rig? Also, is there a benefit to using either the sliding D Grid or an oval grid when you use the extender?
