Easy Cleanup trick for Boston Butt

I use the V-rack for my Boston Butts. I don't have a plate extender or the plate setter(? The thing with three legs that can be used by the space shuttle as a heat tile) I have found that covering the rack with Aluminum Foil provides easy cleanup without sacrificing any taste and or texture for my pulled pork. I make sure that I pull the foil down in such a way that the juice can drip down on the coals during the cook. Made 2 on Saturday that were worthy if you know what I mean.

    How long do you cook your Butt? and what temp?[p]I have a real problem getting the temp low enough to cook long enough. I would like to get it down under 300 for 12 hours. Is that possible? If so how do you control the temp.
