"chalky" ground beef

so we made some ABTs and some ground beef stuffed bell peppers.  I just put it all in there at 250 for 2 hours.. well the ground beef in the bell peppers turned out really weird.  i can only describe it as chalky.  Anyone experience this??  i did use 90/10 gb thats all i had and i added some seasonings
