Migas+mini=brunch

Returned late last night from Dallas.  Rummaged around the frig and found everything to make migas.  
fresh homemade tortillas on the griddle

While making tortillas grated cheese, roasted tomatoes, garlic and jalapeño

cut tortillas into strips and fried up in butter

All in the skillet.  Used crema mexicana to keep eggs from over cooking.  When almost set folded in the cheese

served with fresh roasted Costa Rican coffee

    I love migas and those look great.  Any chorizo?

    I usually wrap them in a flour tortilla to eat.  Do you do that?

    Thanks No both the bacon and chorizo was frozen.  We used the corn tortillas that didn't go for the strips for wrapping the migas.
