    I followed VI's advice and went with a carbon steel wok. I'm not sure if the density of the cast iron compared to the carbon steel will cause extra heat time but am inclined to think so but that gives you extra time to have another drink.

    That is a beautiful pan, but I would like it at least gasket level so that I can get my spoon into stir.
