Thermometer calibration?

My cooks have been taking a bit longer than recipes call for so I tested my thermometer - is about 8-9 degrees high. Question is - is there any way to calibrate the egg thermometer or just cook everything at a "higher" temperature?

    Take a look at the back of the thermo-there's an adjustment nut back there-just dial it to take out the off-set then recheck the calibration.  Should be just fine-
