Saw a post short while back about butterflied chicken breast with provolone and ham.  Can't locate it.  Suggestions on what temp to cook at would be appreciated.  Thanks

I do all my chicken (spatchcock, bs breast, bone in breasts, leg/thigh quarters, wings) raised direct on the top level of my adjustable rig from Tom at ceramicgrillstore.com

I usually shoot for 375* dome and it yields wonderful results! For stuffed chicken you may want to go a little lower, 325* maybe. Then finish around 400* to crisp everything up.

I'm sure others will chime in shortly...

I agree with tmackie. If you do that, everything will be just fine.
Be careful, man! I've got a beverage here.
