smoking sausage questions

so, just wondering about smoking sausage. do i simply buy my favorite butcher sausage links and smoke them?  what would the ideal egg temp be? how long should the sausage smoke for?

    Two ways to go hot or cold smoke ...

    Assuming hot smoke, 200º to 225º until internal is 160º for immediate consumption. I like to take them off at 140º sometimes, then refridgerate or freeze for later. Then finish them on a hot grill.

    Casings tend to be quite chewey when cooked slow, so on many occasions, I use bulk formed into patties.

    Making fatties out of bulk is also the bomb ... making myself hungry!

    Never eat anything passed through a window unless you're a seagull ... BGE Lg.
