I did some Prime Ribeyes a week or so ago by searing them on the Mini, then putting in my Woo with a pizza stone to cook them indirect to Med Rare (they were 2 inches thick and my wife hates char). I am thinking about doing them again, but searing them on the Mini then cooking them on a salt block at 400 degrees or so to Med Rare.

I just cook them direct in my small on the salt block. Bring BGE and salt block up together and when the dome hits 600-650 I toss the meat on and give a few minutes or so to sear turn over same thing and then just shut the egg down, top and bottom closed and keep an eye on the meat with my thermapen. turning the meat again to cook. Egg gets to 400 pretty quiack and I do not have to pull the fmeat, drop temp eggcetra.
