I'm doing my first rib cook today (see thread on St. Louis Ribs 1st timer) but had another general question on ribbing...

Can one pull ribs and wrap in foil for a few hours in a cooler ala a butt cook? It is too late for me to do that for todays cook but would be good to know for future reference as I try to time completion of food.

Thanks,

I did a batch of St's a few weeks ago and took to a party wrapped in foil for 3 hours in a cooler. Pulled a little sooner than regular as they will continue to cook. Fall of the bone. Let everyone sauce as they wished.

I would think ribs would cool a bit quicker than a butt or brisket, as the surface area/mass ratio is so much higher, but if you got 3 hours on your ribs in a cooler, can't complain about that! :)
