Spinach with a little EVOO, garganzola, and pecans along with foiled asparagus with garlic EVOO and on the the small at 350
Dried the scallops between some paper towels and a heavy dusting of PP Blackened Redfish Seasoning
On to Mini at 500 dome

Three of my all time favorites and you make them look awesome!! I have never tried blackening seasoning on scallops....I'm inspired!

Brad - someone in Salado suggested drying them out real good before applying seasoning. I pulled them out of the freezer yesterday morning,and this morning I put paper towels between them and changed a few times while in the fridge. Worked well - covered with melted butter before adding the PP seasoning.
