18th Birthday Dinner

#1 & Only Son to turn 18 on Sunday -- He will be home alone and returning to school while Ku & I will be returning from Salado :silly:
Found a 5+ # Frenched pork loin at Sam's a while back and saved it -- a favorite of growing young man's
LBGE went very hot at 400 and gave me a new "do" for Saladao :S , but wrestled it back to 375 and cooked to tasty goodness :laugh:
Brined in 2/3 c Kosher salt, 1 c fine sugar, ground bay leaves, ground sage, and a bit of dried mint from last year's harvest -- all in 10 cups water for 4 hours; rested 2 with Raging River on underside. Sure was nice to have a bit of bone, but not that impossible to cut through chine bone :blink:
Cooked over drip pan on lower AR (used MBGE grid) for 45 minutes, flipping from fat down to up at 30 min.....temp ranged from 117 - 145 at 45 minutes, so added some water to the pan for about 5 minutes, then went direct on lower level for 10.
Served with baby bella gravy, mixed rice (wild, brown, and jasmine) pilaf, and asparagus tips.

Nice cook and great looking plate. Wish I got food like that when I was 18 but then again all I did was drink. In 1975 I turned 18 and that was legal drinking age at the time.

Why yes, those are capers! Sauted thin tips in butter and finished with capers and lemon juice. Someone at the Texas Eggfest did that in Austin last year and I stole the idea for this Important Birthday
Rice had celery, onion, dried red bell and sundried tomato bits, a date, pistachio, all minced and sauted into rices and cooked in chicken base
Only a spoonful of rice and a wedge of meat left over!
Son looking forward to cooking for the next few days--has been hanging out in the kitchen a LOT this week -
