Has anyone made Carnitas on the egg. Not using a dutch oven but indirect like your making pulled pork? If you have a tried & true recipe you'd like to share it would be greatly appreciated Thanks in advance.

I have a wonderful recipe for carnitas that I found on the internet last year. While I don't know if it is authentic Michoacan style, I have made it several times and received rave reviews from family and friends. The recipe calls for stove top/oven preparation, but I think it could easily be adapted to the egg -- cooking indirect using the oven temps/directions given. I've made this recipe with both a pork loin and pork tenderloin (which cooks a bit quicker than the loin).
I'm a newbie myself, but plan on trying this on the egg soon in a cast iron dutch oven.

Traditional carnitas are fried in their own rendered fat. That's tough to do without a Dutch oven. You could do puerco pibil which is more of a marinated pulled pork. Give this a try:

You can find the achiote paste in the ethnic food section of bigger grocery stores.
