Being married to a woodworker I have access to a wide variety of wood scraps. I think I have heard of using oak, hubby disagrees. So I thought I would check with the eggsperts to see your recommendations. Any help would be gratefully appreciated. Thanks

about 3/4 way down a section called general info and has a list of wood good and bad for smoking.
Oak can be used but is listed as a heavy smoke -
it is also going to depend on what kind of oak...I find white oak to be lighter and good on red meat, or mixed with fruit woods...expirement with just a little and increase until you get what you want.

That list has cedar as not suitable for smoking...cedar planked salmon is the best- IMO. Not sure why the Whiz makes such a statement.

i use oak on hot and fast brisket cooks, big chunks and really go heavey with it. those jack danials chips you see are also oakfukahwee maineyou can lead a fish to water but you can not make him drink it
