        <description><![CDATA[One of those very simple recipes that always hits the weekly rotation. So good it doesn’t even require a protein. <br /><br />Caprese Pasta Salad:<br /><br />-12 oz box bow ties, cooked and drained <br />-About 10-15 leaves fresh basil, rinsed and chopped <br />-1 or 2 containers grape or cherry tomatoes, sliced in half<br />-2 big cloves fresh garlic, minced<br />-At least 4 oz fresh mozzarella pearls<br />-1/4 cup EVOO<br />-Splash or 2 of aged balsamic vinegar<br />-S&amp;P to taste <br /><br />Combine tomatoes, basil, mozzarella, garlic, EVOO in large bowl. S&amp;P to taste along with a couple of splashes of balsamic. Stir to incorporate, cover loosely and allow flavors to marry on countertop for at least 45 minutes before adding pasta.<div><br /></div><div>Cook and drain pasta.  Place hot pasta on top of  tomato mixture.         <description><![CDATA[I made a really good side salad and enjoyed it so much that is all I had for lunch today. So, I guess that makes it an entree salad.<br />We tried this with thousand island dressing, ranch dressing and a vinaigrette dressing as well. My wife liked the thousand island and vinaigrette about equally, while I preferred the ranch. I have made this before using black beans, but tried red kidney beans this time. Next time I might use more beans, as the beans to cucumber and onion ratio seemed a little off.<br />Anyway, this was easy and very good if anyone would like to try it.         <description><![CDATA[Hi...I'm still really new here so hope this doesn't go against forum rules for me to post a URL for a site where I get a lot of great basic BBQ tips and recipes.   Here is one of them for a simple slaw that is my preferred slaw with pulled pork...it's not mayo based so it really keeps great in the fridge and like a lot of us...gets better with age.  This and the Grown Up Mustard sauce I posted yesterday are all I serve with my pulled pork sandwiches and haven't had any complaints so far.  I just made a batch and I'm trying Sesame oil this time cause I love the nutty flavor and yes, I added a little heat.   You can find both of these on Meathead Goldwyn's site... www.amazingribs.com  and please post what recipes you try for everyone's benefit. Add white radishes if you like a jab of heat. Add a small jalapeño if you like a punch of heat. </em></p><h3 data-id="method">Method</h3><p>1) In a bowl large enough for the whole shootin' match, whisk together the dressing. Don't skip the mustard. It's the secret ingredient that gives it life. I like this recipe best when chopped or grated. Now that you've decided, do it.</p><p>3) Add the cabbage, carrots, pepper, and onions to the bowl with the dressing. Cover and chill for at least 1 hour if possible to extract the flavors from the celery seeds and the vegetables. They will give up some water, so don't worry if the mix seems a bit dry and strong at first. Mix it up occasionally so the dressing doesn't pool at the bottom and taste.         <description><![CDATA[So the last thread I saw some weeks ago about homemade kraut inspired me to buy a container off of amazon that someone posted a link to.  I received the container and made a batch of kraut.  I let it ferment for about 5 weeks, very good flavor, I didn't experiment, just 3 heads of cabbage, 3 table spoons of kosher salt, and a cup of water.  Ran the cabbage through the food processor and then rolled with a rolling pin.  My new batch that I am starting today is longer, thicker strands of cabbage. escape the heat and visit my favorite restaurant in Sedona, the Elote Café.  We searched the Camp Verde farms for the same&#13;
produce that they serve and we came across some of the sweetest corn I’ve ever&#13;
tasted and some beautiful tomatoes. &#13;
Naturally, I thought I’d make one of their simple yet tasty salads and&#13;
just had to share.  To be honest,  I really missed my egg this weekend.  We have a Weber kettle at the Cottonwood&#13;
house and I can grill just fine off it, but the egg has spoiled me.</p>&#13;

<p>Here’s the recipe from the Elote Café Cookbook by Jeff&#13;
Smedstad:</p>&#13;

<p>Serves 4</p>&#13;
&#13;
<p>2 cups hand-shredded Oaxacan cheese</p>&#13;
&#13;
<p>½ cup diced onion</p>&#13;
&#13;
<p>¼ cup chopped cilantro</p>&#13;

<p>4 radishes cut in half and thinly sliced (I left these out&#13;

        <description><![CDATA[So tomorrow I am going to try a grilled watermelon salad. Anyone ever done it on the BGE before? I'm taking a small seedless watermelon, cutting it in slices (keeping the rind one). I'll then get my BGE set up to 500 degrees Fahrenheit with my lump charcoal and throw in my ceramic grid. Once temperature is set, throw on my watermelon. I'll flip the watermelon until each side is charred. Once that is done, I'll bring the watermelon inside the house, cut in to cube.<br /><br />Next, I'll throw in a handful of cut fresh basil and about a cup of feta cheese. Season with black pepper and salt to tasting and voila, a grilled watermelon salad. I'll post pictures tomorrow. Until then, have a safe and happy 4th of July.]]>

        <description><![CDATA[Okay, so the wife wanted me to fire up the grill. Nothing in particular, but something grilled out. So, I decided to try something my father told me about - Grilled Salad.<br /><br />After grilling some hot dogs, it was time to go to work. <br /><br />Halved romaine hearts, lightly brushed with olive oil, and put face down on the grill direct heat @ 450 to 500.  Don't need to be there more than 2 minutes before you take them off and plate them up. <br /><br />I sprinkled fresh feta and parmesan cheeses, some course sea salt,  black pepper, fresh chopped basil and some balsamic vinegar. <br /><br />Was a pretty good meal, I must say. <br /><br />My best, <br />Eric "GuitarEC"<br />N.E.         <description><![CDATA[While smoking a brisket this weekend I whipped up some smoked baked tater salad. I threw about 3 pounds of tater on the egg while the brisket was working its magic. I chopped up the cooked tater (with out the skins) and mixed them with 1 cup of mayo, 1 cup of sour cream. 1.5 cups of cheese, and 8-10 slices of bacon and a little salt &amp; pepper. One recipe also called for chopped scallions, but I left those out since the wife isn't a fan of onions<div><br /></div><div>It turned out really good. The longer it sits in the fridge the better it gets.</div>]]>

        <description><![CDATA[<h4>Ingredients</h4><p>1 head of Romaine lettuce – Per two people<br />
Olive oil - The spray stuff is super handy for this.<br />
Crumbled blue cheese (optional)…I have seen shaved parmesan used with other dressings.<br />
Blue cheese dressing is our favorite – You can go with your favorite.<br />
Cherry tomatoes, split in half<br />
Salt and fresh ground pepper</p><h4>Instructions</h4><p>After washing and drying, slice the Romaine in two length wise.  Drizzle liberally with olive oil, add a little salt (preferably ground sea salt), fresh cracked black pepper and you are ready to cook.</p>
<p>Toss the lettuce on the grill sliced side down as you finish up cooking the main dish, which is usually steaks or a slab of fish for us.</p>
<p>How long you leave it will depend on the temp of the grill.  If you are doing a steak at 600 than it's not going to take long to heat up some oily lettuce.  As soon as you see some of the exposed leaves wilt and turn brown… it's done.  Maybe 90 seconds.  If you are using indirect heat at 300 it can take 3 min or so.  The key is to get the lettuce toasty, not turn anything into carbon, just get it hot on the grill side.</p>
<p>Set it on a plate cooked side up, add crumbled blue cheese and dressing to taste, toss on a few tomatoes and enjoy.</p>

<p>1 pint cherry tomatoes</p>
<p>1 medium cucumber, peeled, seeded, diced</p>
<p>4 ounces feta cheese</p>
<p>1 tablespoon chopped fresh oregano</p>
<p>1 tablespoon red wine vinegar</p>
<p>1 teaspoon Dijon mustard</p>
<p>2 tablespoons olive oil</p><h4>Instructions</h4><p>Prep the first five ingredients and combine them in a large bowl.&nbsp; In a small bowl, whisk together the vinegar, mustard, and sprinkling of salt and pepper.&nbsp; Drizzle in the olive oil in a thin stream, whisking constantly until the dressing is emulsified.&nbsp; Add the vinaigrette to the salad a little at a time and toss until the dressing coats (but doesn't drench) the vegetables.</p><h4>Notes</h4>You only want the dressing to coat the vegetables and cheese, but I did make a bit extra so it was well coated.  You don't want to drench it, but a heavy coat was perfect. I also like to add avocado sometimes.<p><b>Number of Servings:</b> 2-4</p><p><b>Time to Prepare:</b> 15 minutes</p>]]>

<p>1/4 teaspoon Ginger</p>
<p>1/2 teaspoon Salt</p>
<p>3 cups cubed cooked chicken</p>
<p>1 1/2 cups red seedless grapes halved</p>
<p>1 cup sliced celery</p>
<p>1/3 cup sliced green onions</p>
<p>1/2 cup chopped walnuts or pine nuts</p><h4>Instructions</h4><p>Combine first three ingredients. Stir in remaining prepared ingredients. Cover and chill.</p><h4>Notes</h4>It is easy to change up the texture. I like to mince the chicken and quarter the grapes. Sometimes I will crush/grind the wall nuts. If I use pine nuts I leave them whole or a quick 1 time chop.

Add a little crushed red pepper flakes to add a little heat and flavor. Minced roasted jalapeno is also very tasty.

If using as a 'dip' chop all ingredients smaller even to a fine mince.

Try the basic recipe first than have fun and play with different textures and flavors. It's always a treat.

2 each, red, green, and yellow peppers<br />
6 ribs celery<br />
1 med onion<br />
2 bunches green onions white and green parts (optional, I did not use at Waldorf)<br />
1 cup golden raisins<br />
BBQ rub (Dizzy Pig's Tsunami Spin is a favorite)<br /></p><h4>Instructions</h4><p>Season the tuna with your favorite rub (DP, Tsunami Spin in this case) and cook (direct, raised grate at 325-400) with some smoke (I used apple and pecan), until the tuna is well done (145 F) and let cool to room temp.  Put in a zip lock bag and break up with your fingers to desired size chunks.</p>
<p>Chop all the veggies into 1/4" dice, mix in the tuna and raisins and add the mayo to the desired consistency (probably about 2 cups for this much).</p>
<p>Season the salad with additional rub to desired flavor and saltiness.  I am guessing I added a heavy tablespoon.  The truth is, I added some, tasted it and added some more.  </p><h4>Notes</h4>Note:  You can do the same thing with grilled chicken that is chopped fairly fine. <div>2/3&nbsp;c. sugar</div>
<div>Another 1&nbsp;tablespoon sugar<br />1 tsp. salt<br />1 tsp. dried mustard</div>
<div>2 tsp. celery seed (must have! and NOT celery salt!!)<br />1&nbsp;c. white vinegar<br />1&nbsp;c.&nbsp;olive oil (highest quality you can afford...the good stuff really makes a big difference here)</div>
<p></p><h4>Instructions</h4><div>In a sauce pan, combine vinegar,&nbsp;celery seed, mustard, salt, and 1 tablespoon of sugar. Turn on high and bring to a boil, but while this is heating up, do the following: </div>

<div>Get a large bowl and add half of the sliced cabbage. </div>
<div>Sprinkle half the onion on top of the cabbage (do not stir)</div>
<div>Sprinkle 1/3 cup of sugar across the top of the onion (do not stir)</div>

<div>Spread remaining onion on top (you guessed...no stir)</div>
<div>Sprinkle one more 1/3 cup sugar over the top (do i need to say it?)</div>

<div>Ok...status check...what to do with that oil? Have a couple of sips of a cold drink, by now your saucepan should be boiling. Shut it off as soon as it comes to a rolling boil.
