I have a medium. I've maximized the space pretty well. Among some of the larger items I've cooked are 2 butts, a pretty big Prime Rib that served 10, and 3 racks of ribs. It will also cook a 15+ lbs …1 · -

That's pretty low. I'd bump it up to 250. I really don 't think there is any advantage to going that low. You'll get the same result between 250-275. Best of luck.2 · -

Have you cooked a butt at 350 with success in the past? I'm a believer in low and slow. My advice would be to drop the temp and plan for a longer cook. Hasn't let me down yet.1 ·
