  • Re: Easter lunch suggestions?

    I would do some type of lamb for easter.  You could do shanks, leg of lamb, rack of lamb, or lamb shoulder.

    do not put pizza on plate setter.  Go with plate setter legs up, grid and then a pizza stone.  Or plate setter legs down, spacers and then a pizza stone.  This should help keep the bottom from burning. 

    Also, i cook pizzas at around 550.  Make sure the pizza stone is up to temp.

    This is not a book of recipe but list of ingredients that go well together.  I find it to be usefull when you have a bunch of odd ball ingredients left over.

    I just trust my butcher when it comes to picking meat. 

    My butcher will often tell me if the choice or prime would be better.  Often he suggest the choice if it looks well marbled.  He says you won't be that big of a difference between good choice and prime so it is not worth the extra cost.
