    Once dirty it's useless....throw away and but a new one.
  • Flatbread on The Baking Steel

    Could just have easily called it pizza, but I did them very thin with the goal of a cracker crisp crust and flatbread doesn't sound as mundane as pizza. Setup was on top of AR--16" stone, spacers, steel so it was nice and high in dome...I used homemade dough (serious eats Neopolitan recipe), cooked at a relatively low 550 since I wasn't really looking for much charring with these pies.     Top right two seasoned with Cowlick/Raising the Steaks, others just kosher salt and fresh cracked black pepper. Me likes the steel so far...

    Ha. CT--I make almost the exact same one sometimes, except I use sautéed broccoli raab instead of broccolini...they pretty similar 'cept the raab is more outside the box pizza toppings. My current favorite is pesto for sauce and then thinly sliced parboiled potatoes with green beans and dollops of either fresh ricotta or marscapone. Give that one a rip!
