Can't wait to see how they turn out! FWIW, you might wanna alternate them if you went with the 2 tier approach. It's hotter up in the dome, so if you alternate them after awhile, they'll cook more even. Good luck!
@clintmiller , the guy in that video expressed his (and my) thoughts about the chili quality perfectly. Good stuff but even better made at home. Not competition, not Texas Red, but just a tasty and cheaper change of pace. Thx for the link!
