I just put a 9.4 lb pork belly, also from Costco into it's liquid cure yesterday.  I can't wait.  Yours looks wonderful.

There are people who compete with BGEs and even some who do pellet smokers. Most do large stick burners. You could definitely do it with a couple of Eggs. The main issue I notice in pictures here is the much smaller smoke ring compared to what you see from a stick burner. Judges like the thicker smoke ring and appearance is one of the things you are judged on.
We cooked this on ceramic kamado cookers including BGE, I think this is a pretty good smoke ring, regardless of cooker.  Pics are from 2 different comps.

If you do all 4 meats then I highly suggest 4 cookers, chicken could be done on a weber kettle or similar.  I am referring to a KCBS comp with 4 meats.

Hearth and patio will take good care of you.  Mine broke a few weeks back and in less than two weeks got a new base.  Warranty of course.

Congratulations @Squarehook, I knew I couldn't beat a Drunken Duck.  Big thanks to @NPHuskerFL for running a great throw down.  Nice pies guys!!
  • Dazed and Confused (pizza)

Wife and I couldn't decide what to put on our pizza so we made 1/2 Italian and 1/2 Buffalo Chicken.  Homemade crust with some herbs added for extra flavor, sliced mozzarella on the dough, Regular red sauce on Ital side, buffalo sauce on other.
Italian had sliced pepperoni, onions, olives, shrooms, garden tomatoes, fresh basil, shredded italian cheese.  Buffalo had marinated buffalo chicken, blue cheese crumbles, banana peppers, some onion and shredded italian cheese.  Cooked about 510 raised direct for 7 1/2 minutes.  Tasty.
