    Looks great! Beautiful color to the steak. Interested in knowing more about the plantains. This is on the list of SWMBO. We had some plantains in Miami and she was hooked.
    Sliced, smashed with a glass.   Fried, let them rest and then fried again....I can't get enough of fried plantains.

    Interesting, I've never had issues with my Egg maintaining a temp.  NO matter what I'm cooking it stays rock steady within a 10 degree +/-

    Yeah I just used the brisket flat.  That's all Whole Foods has.   The only place I can find a whole packer is at Walmart and I don't go in there often if at all.

    The taste was just something indescribable!

    Yeah, he has used it on his BBQ show for a few seasons.  Michael Symon is another one who loves his BGE he'll show many of his cooks at his house on his BGE especially pizza.  But anytime you run into a world chef like that their choices of ingredients aren't usually something I can come across on my normal trip to Kroger :)
