I won't use any less fat content than 80/20, and then cook to med rare.
Except for the raw stuff I eat while making the patties!

+1 what nolaegghead said about the Kamado Joe Jr. It's weight and the cool rack it comes in really helps with portability of a unit with a 13" cooking grid.
It just makes a good companion for my Large BGE.

I don't care for many of them, but I do really like Stubbs Original.
BTW, it isn't necessary to soak your wood smoke, just a waste of time.
