  • Pork Steaks!

    I have been lurking on the forum for a few months now and really appreciate the cooks and recipes that everyone shares. I am a native St.Louisian and we enjoy our pork steaks here. I have cooked them twice now and I think I have the kinks worked out. I used Smokin' in the Dark Medium Rub Link Here and grilled indirect at 300 dome temp for about 3 hrs on my large. Sorry no pics...I'll take some next time. I love the medium rub from these is so versatile. Anyone else have any pork steak recommendations?
  • Pork Steaks

    Well...temp hit 70 today in St. Louis, so I had to do it.  :@) ;  First pork steaks of the year.  For those that aren't familiar with this cut, its a St. Louis tradition - steaks cut off a pork butt - a.k.a Pork Steaks.  Tried two new products with them tonight.  I used Hogs n' Heat rub and Blues Hog sauce.  I think they go quite well together now.  Here are the pics

    I have never cleaned mine in 4 years...smells like BBQ heaven on the inside.   :D

    As for ash cleanup...I do that about every 4 cooks depending on how many of them were low and slow.

    personally I have 3, but we have 5 in the "family" so no matter who's house we are at we have an Egg available.
