When I was shooting, we used black powder. I used 4F in the pan. Now, I've heard that black powder is mostly outlawed and stuff like pyrodex and other replica powders are used. Perhaps, that kind of powder produces a quicker ignition, and therefore, a quicker ignition of the main powder charge.
My only advice would be to not try the fancy stuff for awhile. Get a recipe and follow it EXACTLY. For meats, be sure you have an instant read Thermapen so you can pull it at the right time. Remember, we all go through slumps. I'm hopefully coming out of my latest slump. It seems everything I've made lately is no where near as good as the last time I did it. That usually happens when I get overconfident and don't pay enough attention to the details.
