  • New Years Brisket - 53 days young !

    Was given this 15- pound brisket by a friend ( a good friend). Been in vacuum pack in back of fridge since Nov 9th ( ~53 days ) in vacuum pack. Rubbed this morning with sea salt, fresh ground black pepper, paprika, cayenne, and a touch of Brisket Rub that I had left in a jar. Threw in a few hickory chunks to compliment the Rockwood !

    SmokeyPitt ..I'll never forget my first experience with brownies back about 40 something years ago....

    We overdid it and it was like eating a bale of straw mixed with chocolate...well, at least for a little while....then they got better !!!

    I think you are doomed if you want to resist impulse buying AND you are a member here !!!!    Too many opportunities of "must have" eggcessories !!!!

    Hey my friend, GATraveller,  we should get a kayak trip together down the Chattahoochie.  I used to go rafting a lot when I lived in Marietta.  Now I go kayaking a lot up here at home.

    Who cares if it's raining ???

    1.5# ribeye, indirect 250* until 135* IT.  Removed PS, ramped up to 550* and seared 1.5 minutes per side. Rubbed with olive oil and Mickey's Coffee Rub, Parmesan Pecan butter on top.

    Garlic Mashed taters on the side.

    It's what I live for !!!!!!!!!!
