i have my egg directly under a vinyl lined covered porch ceiling. ive had no damage from heat or smoke. of course, your mileage may vary

Aaron Franklin recommends not slicing until you are ready to serve it. He suggests the meat will almost immediately dry out.
most gyros you get are a blend of ground beef, ground lamb, and spices. the tzatziki is below.
1/2 cup of plain greek yogurt
1/2 of a peeled and seeded medium cucumber grated or finely chopped
pinch of kosher salt
1.5-2 cloves of minced fresh garlic
1/2 tablespoon olive oil
1 tablespoon sour cream (this is optional but i think it smooths it out)
dash of cayenne pepper
