    Looking at this reminds me why I always keep the handle of a CI pan to the back....I always want to grab it. haha
  • Re: Reverse Sear Perfection! First attempt

    I tried the T REX method last night, turned out great. Although, I think I will stick to the reverse sear. I got wall-to-wall medium rare with a beautiful crust w/ the reverse sear. With the T REX method I got my desired internal temp and crust, but it dwindled away closer to the edge. Both are great ways to cook. I guess it just comes down to personal preference.
