We hope you had a hoppy Easter and are ready to spring into warm weather cooking mode! There’s nothing better than spending time outdoors with the sweet aroma of fresh cooked Ribs. Baseball season is also underway, so it's the perfect time to try out some chicken wing variations!     This is one of my favorite pizzas!   Heres mine.  It is a little simpler.  I made it again the other night.    Today im going to make a brisket, bbq sauce and onion pizza for lunch.

  • My VOC reducer/lump filter

    Let me start by saying I have NO scientific evidence this works, but it seems to work for me. It only takes an extra minute or so to filter it so why not give it a try?  the buckets are $2.95 from home depot.

    I noticed that when I dumped a bag of lump in my egg and it was towards the end of the bag and there were lots of little pieces and dust, the "VOC's" took longer to burn off.  So, I created this handy contraption.  I drilled 1 inch holes in a bucket.  Put that bucket into another bucket and dump your lump in.  Shake it, rattle it etc and get all the dust to go into the bottom bucket.  pour the filtered lump into egg and viola!  To me, it seems to be ready to cook faster and the "bad" smoke seems to burn off faster.  maybe its all in my head!

    If anyone mentions "fair" at your place of business, run like hell.

    Dude, this is the most irritating parapet of my job. They do everything based on being "fair". Drives me f'n NUTS. I have expressed many times how business is not 'fair' but that is how they operate. I am treated the same as the guy that's been around a month even though I've been around for 5 years. It's business, not a firkin charity.

  • Re: Trusting BGE with low temp cook?

    Supposedly RO is the same as BGE lump, just repackaged.  For half the price, I have no problems with lownslow with RO.  In fact, I have a bag of BGE lump in my shed but I still go with RO every time.  I guess im saving the BGE bag for a  "rainy day" or really important cook...or something.  Not really sure why I have not used it yet!

    God I love Runza!  I grew up in NE but have lived in Colorado for 20 years.  There are actually two runzas in Northern Colorado....but its not the same.  whenever I drive through NE, my first stop is Runza!
