  • Re: NY Strip Steak pr0n

@SaturdayFatterday - Beautiful looking steaks, man!  I love the reverse sear..

@radamo - I use a pair of these and they work just fine for me:

and pretty cheap to boot.. regardless, though, you'll be hard pressed to find a pair of gloves that will let you hold a plate setter for more than 30-60 seconds, so get your spot prepared ahead of time and move quickly :)

I put mine legs down on my deck and haven't had a problem with it, but when I think about it I have a steel disc that my cheapo drum smoker used to sit on.
  • Dinner - Spatchcock & Asparagus

Spatchcock rubbed with montreal chicken seasoning and a little dizzy dust.. then threw some asparagus in a drip tray with some onions, olive oil, kerrygold butter, lemon juice and some s/p & garlic..

Spatchcock was delicious as always, but the asparagus was out of this world - and I'm a huge fan of asparagus to begin with.
  • Today's Cook (Pork Butt, Beef Ribs)

I picked up an 8 lb butt at wegmans yesterday and they had beef ribs on special.. I've never done beef ribs before so I picked up a small rack to try them out..

Did the whole cook at about 300 dome temp, the butt went on about 9am, wrapped around 2pm at 160, finally pulled the butt at around 5:30 at 203 and FTC'd for a few hours..

I threw the ribs on around 2pm when I wrapped the butt, dusted with some swamp venom and did a 3-2-1 with them, using some squeeze margarine and brown sugar during the wrap and they turned out really good.. and, although they were very tasty, it just makes me want to go pick up a few racks of spares and throw them on tomorrow :)

We had eaten a bunch of the pork before I thought to take a picture, so the end result photo is a little underwhelming, but both meats turned out spectacularly.

  • Re: Too much drinking.. So I'm gonna say it

I think a lot has to do with people not seeing the donation post.. I know personally I was looking forward to it when we were first discussing the idea but when the actual post was made directing us to the donation site I totally missed it and it wasn't until a week later that it had been bumped at the right time for me to see it and go ahead and donate.

I don't know if this is possible but in the future I wonder if the admins would let us sticky a post like this at the top of the main page for a month.

Also, there are a lot of circumstances that would prevent someone from being unable or unmotivated to donate.  This forum in general serves a very specific purpose for most people so when it comes time to buy BBQ accessories and there's a group buy or something going on here there aren't any alternatives if you want to get in on a deal.  There are, however, a vast number of charities and avenues to donate to them.

Group donations like this are a great idea but I think we should learn from this and set our expectations for the future accordingly.
  • Re: Brisket #2- some notes on Meyer All Natural Briskets

CenTex - Did you stock up on meat glue as a low-cost alternative to the ER just in case the Shun knife strikes again?  I should probably pick some up..
