Add me to the crowd who doesn't go out on Valentine's Day. Too crowded and too many people who only go out on Valentine's Day, so they have no idea that the entire restaurant isn't all about them.
I'm cooking twice; although neither on the egg most likely. On V-day itself I'm making white wine poached salmon with a caper-parsley butter sauce, which is what I made the first Valentine's we were dating. Then over the weekend I'll be braising lamb shanks, which is what SWMBO requested; just don't have the time to do it during the week.

That is interesting that you've never seen them for sale, especially since you're in the area (if I remember correctly you split time between ME and MA). I can get most of their offerings in the Baltimore area, and whenever I visit my folks I head up to Orono to visit the store I bought my first beer, and they had Allagash products last summer at least. I personally prefer the Curieux, and the Allagash Black is one of my 3 or 4 favorite beers in the world.
I also think they made the best choice among the MD offerings I've had.
Shun will get a ton of recs here, and it should, but Henckels and Wusthof are both really good as well, and there are other brands that are good too.
My recommendation would be to take her to a store and both of you try them out. Make sure the handle fits your hand, the balance works well for you etc. Then, once you have a brand/line/size/etc that works for both of you, go online to price compare and buy.
