Austin is in a full gas panic - at least in my part of town.
  • Re: Questions about ribs

@XK150 , I found two steps of "enlightenment" cooking  on the egg.

Before the egg, I cooked by time.. 45 min per pound, etc. Now...

    1. Cook to temp, not time.  Each piece of meat will take its own time to the finish line, and 195F is the pork pull temp finish line.

    2. Cook to feel, not temp! Each dang piece of meat is different and doneness is different from animal to animal.  Wtf.

So, on ribs.. There is no easy way to probe the temp, it's thin and varies from edge ribs  to middle ribs.  Instead, you hear folks give feel advice.. The bend test, the toothpick test.. Both are feel tests..

In general, grab three ribs with tongs. If they bend 90 degrees, you are done.

Our, poke with a toothpick.  If it probes like soft butter... Finish line.

Notice, no time or temps  given.

    Tiger who?

I saw this week that tiger fell out of the top 1000 (not 100, 1000) golfers in the world. I actually think that sucks. I couldn't stop watching when he was at his best. Jordan is a local guy for us down here so that is really fun to watch. After how he melted down in the masters last year, when he was 4 over and 100 yards of course today I was thinking "here we go again". What he did those last 5 holes was pretty ballsy. Fun to watch golf again for the first time in a long time. I keep waiting for Rory to step back up and provide some fireworks with those 2 for years to come.
Agreed. I'll say, I've always wanted to golf as well as Tiger, and now I do!

    The comparisons are laughable..

Look at 23 and 24 year old Tiger..  Holy crap. He won over 40% of the tourneys he entered in that span.  That's nuts.

Patch would be neat, you sell the hats, but you can also use it on shirts to wear while you cater.  I'd recommend bowling shirts.
