You are correct, direct @ 500°ish for about 3 mins per side. You just want it wilted with a bit if char.
That will be good eats. Agree with @lit on straight on the grid but it will take way longer and a little bit different texture. Sounds like you are mocking a tried and true recipe from your wife. Good luck with the cook
I like to cook them @ 325ish indirect till you get that buttah feeling when you probe. Rub with your favorite pork rub. My last ones I used Firewalk and sauced with Blues Hog.
