becarse my turkey is so big...I need to put in on the turkey holder and put it in a pyrox dish on the plate setter with the feet up...and even at that it almost touches the opening on the top...do you think I will be ok.?? or shold I lay the turke…

I have a large egg...and a 23 lb turkey...will it fit standing up on rack...or should I lay it down in a pyex dish like in the oven.?? how long will it take......will the charcol last that long if I keep it at 350 / 375
