I like big chunks of bark in mine and this would pulverize the bark into tiny bits.

Fox brothers is number one IMHO however DBA BBQ in Virginia highlands is close. On Sundays they serve smoked fried chicken. May sound weird but man is it tasty!

I have only tried injecting butts and since I stopped I haven't noticed a difference in the taste or moisture.

Rub and cook the tenderloin until internal temp is reached. Sautée sliced shrooms with evoo salt and pepper until tender. Slice the loin and serve with the shrooms and a little bit of the melted cheese on top.

No experience with the combo. I have the pen and the infrared and love both. If it doesn't change the accuracy in either I can't see why not.

I had one in January. I couldn't imagine sitting in a wc. I stayed in bed and iced iced iced...sitting was uncomfortable for me but everyone has different experiences. Good luck!

Changed my gasket with the lid on. Don't know if I would try again. I had to patch a little toward the back but it hasn't caused any issues. I used the self adhesive gasket so stay wasn't an issue.

You could always wrap it in bacon and finish with the BBQ sauce of your choice.
