Restaurant Depot is in Seattle you can get great deals on RO there. Around $10/20lb need either a sales tax# or KCBS membership to shop. Also grat deals on primals & spices.

APL calls to cook for 1 hour before applying bacon. I would either do it after 30 minutes or for the whole cook in order to crisp the bacon properly.
