I installed an ash vacuum system in mine. Also went with concrete tops, thought about cherry wood top ahead of time and at times I wish I went that route. Since I'm in the Midwest, sink and fridge wasn't an option for me.

I use one of the probes that came with the iGrill2 to monitor dome temps.
I use an ambient for that. Only difference is the ambient reacts quicker to temp changes and is rated for higher temp
I have the iGrill 2 & iGrill Mini, love both of them. Not sure what the range issues are, I've been able to walk 90' away from mine through my house and stay connected however I did that just to see how far it would go. I'm typically 30' - 50' away …

Dome was 235°, pulled at 120° internal to remove plate setter, cranked egg to 550°, put steaks back …
