@jonhalestrap sorry just getting back to you, but direct and high heat. No plate setter, on grilling steaks. I do a reverse sear on tri tip, so on that one I smoke it, then take place setter out and then sear it on both sides.

@duganboy that's what everyone thinks, but ever just north of Dallas matador meat in Plano cuts them this way. @smokinsooner shops there as well, he didn't believe me when I told him it takes an extra hour to hour and half to cook his ribs.
@smokeypitt we have a butcher in Plano, TX that cuts his baby backs that big. He is not cheap, each rack cost about $28. He is about double on per pound than a grocery store. But there is so much meat you get full fast. He does say butchers dont cut…
